Cambridge House Smoked Salmon

Smoked in small batches at one of the world's few remaining traditional smokehouses. Fresh Atlantic salmon is smoked over fallen oak logs, apple wood and oak chardonnay barrels - a time-honored process that gives off far less smoke than the modern woodchip method. The dark meat is then hand-trimmed away to leave a deep coral-colored fillet. The result is a buttery richness and a depth of smoke that is hard to find anywhere else.
