Hosui Asian Pear
Hosui is the juiciest of the Asian pear varieties - round, russet-skinned, and so crisp that it snaps rather than yields. High in sugar with almost no astringency, it is at its best served cold and cut into wedges.
Fuyu Kaki Persimmon
Fuyu is known in Japan as the king of the sweet persimmons. Glossy orange-red and non-astringent, it can be eaten while still firm, sliced like an apple, skin and all.

Keeping persimmons crisp
Left at room temperature, persimmons soften in about five days. To hold the crisp bite, cover the stem with a dampened paper towel, wrap in plastic wrap, place in a bag, and store stem-side down in the refrigerator. They keep for about two weeks this way.
